Lentil salad served in a bowl with Borges extra virgin olive oil


  • 320 g cooked lentils
  • ½ red pepper
  • 1 green pepper
  • ½ red onion
  • 1 cucumber
  • 2 extra-ripe tomatoes
  • 1 carrot

For the vinaigrette

  • 80 ml Borges extra-virgin olive oil
  • 25 ml Borges balsamic vinegar of Modena
  • 1 tbsp lemon juice
  • A pinch of mustard
  • A pinch of pepper

Step by step

  1. Step 1

    Put the cooked lentils in a bowl. If you bought them ready cooked, rinse them in plenty of cold water and leave to strain. 


  2. Step 2

    Chop the peppers, onion, tomatoes and carrots into small cubes and add to the lentils. Stir well to mix all the ingredients together.

  3. Step 3

    To make the vinaigrette, mix the extra-virgin olive oil with the balsamic vinegar, lemon juice and spices. Pour over the lentil salad and stir well. Add salt to taste and mix all the ingredients together.
