One-pot tomato spinach penne


  • ½ an onion
  • 1 clove garlic
  • 400 g cherry tomatoes
  • 500 g baby spinach
  • 360 g penne rigate Borges
  • A splash of extra-virgin olive oil Borges
  • A few basil leaves
  • 1.4 l vegetable broth
  • Salt and pepper to taste
  • 80 g grated Parmesan cheese

Step by step

  1. Step 1

    In a deep pan, brown the finely chopped onion and garlic in extra-virgin olive oil for a few minutes over medium heat. 

  2. Step 2

    Add the halved cherry tomatoes, the spinach, the penne and the basil. Add the vegetable broth, cover with the lid and cook for the time indicated on the pasta package until the liquid has cooked down. When the pasta is done, season to taste with salt and pepper. 

  3. Step 3

    Serve with a sprinkle of grated Parmesan cheese and a few fresh basil leaves on top.
