Pasta all’Amatriciana
Ingredients
- 320 g Borges spaghetti
- 100 g bacon or guanciale
- 1 chili
- A splash of dry white wine
- 400 g ripe tomatoes
- 80 g grated pecorino cheese
- A splash of Borges extra virgin olive oil
Step by step

Step 1
Cook the bacon or guanciale (cut into strips) with a drizzle of extra virgin olive oil in a deep frying-pan or pot. Add the chili and the wine and simmer for a few minutes.

Add the chopped tomatoes. Cover and cook over medium-low heat for about 15 minutes.

Cook the spaghetti following the instructions on the package. Once it’s ready, add it to the sauce. Keep in mind that the sauce can wait for the pasta to finish cooking, never the other way around.

Add a pinch of black pepper and serve the pasta piping hot, topped with grated pecorino cheese.
