Pasta with tomato and pumpkin
Ingredients
- 320 Borges penne pasta
- 1 onion
- 2 cloves of garlic
- 50 g Borges extra-virgin olive oil
- 300 g tomatoes
- 300 g pumpkin
- Salt and pepper
- 80 g grated Parmesan cheese

To make the sauce, sweat the onion and cloves of garlic in a frying pan over a medium heat with extra-virgin olive oil.

Blanch and peel the tomatoes and cut into cubes. Add to the frying pan, followed by the pumpkin cut into small cubes. Add salt and pepper. Cook over a medium heat for ½ hour.

Blend all the ingredients together in a blender and add a pinch of sugar to soften the acidity if necessary.

Mix the sauce with the pasta, check for salt and serve with a sprinkling of grated Parmesan on top.
