Pea Soup

Ingredients
- 1 sliced leek
- 400 g peas (fresh or frozen)
- 1 medium potato
- 40 ml Borges extra virgin olive oil
- 700 ml vegetable broth
- 20 ml balsamic vinegar of Modena
- Salt and pepper to taste
- A few fresh mint leaves
- A handful of chopped nuts, to taste
Step by step

Step 1
Heat the extra virgin olive oil in a pot over medium heat. Add the leek and cook for 5 minutes until softened.

Add the diced potato and the peas. Stir for a few minutes to allow the flavors to blend together.

Pour in the vegetable broth, bring to a boil and cook for 15-20 minutes, until the potato is very soft.

Blend until smooth. Add salt and pepper to taste.

Add a splash of balsamic vinegar and stir gently. Serve hot, garnished with a sprig of fresh mint and some chopped nuts.
