Breakfast toast with boiled egg, tomato and mozzarella

Ingredients

  • 2 boiled eggs
  • 12 ripe cherry tomatoes
  • 100 g mozzarella (halved mozzarella balls work best)
  • A few basil leaves
  • 40 g (approx.) Borges walnuts
  • Some sesame seeds
  • A dash of Borges extra-virgin olive oil
  • A dash of Borges apple balsamic vinegar
  • Salt
  • 2 medium slices of brown toast (about 1 cm thick)

Step by step

  1. Step 1

    Cut the boiled eggs and cherry tomatoes into quarters and the mozzarella into small cubes (or use halved balls). Mix together in a bowl and add the chopped basil, chopped walnuts, sesame seeds, extra-virgin olive oil, apple vinegar and salt (and a teaspoonful of honey, if you like).

    Stir carefully to coat all the ingredients in olive oil without breaking them into smaller pieces.

    Toast the bread and, while still hot, arrange the ingredients on top, taking sure they don’t fall off. Bon appétit!
