SPINACH “A LA CATALANA”
Ingredients
- 2kg fresh spinach
- 100gr cured ham
- 150gr Borges Raisins
- 100gr Borges Shelled Pine Nuts
- 1 garlic clove
- Salt
- Pepper

Cut and thoroughly wash spinach taking care not to leave any earth adhered. Boil the spinach in little water and salt for about 5 minutes, Drain the spinach by pressing them to take all the water out, let them cool down and then chop them. Heat oil in a frying pan, add the chopped garlic clove and cook it until golden. Remove the garlic. Put the chopped cured ham, fry it lightly and add the raisins. When the raisins swell add the pine nuts and fry them lightly. Add the boiled spinach. Sauté over low heat in order to cook all the ingredients evenly. Add salt and pepper to taste.
