Ingredients

  • 2 large eggplants
  • 150 g ground meat
  • 1 onion
  • 2 cloves of garlic
  • 1 ripe tomato
  • 70 g Borges walnuts
  • A splash of Borges extra virgin olive oil
  • Salt and pepper
  • 80 g cheese for melting (to taste)

Step by step

  1. Step 1

    Preheat the oven to 180 °C.

  2. Step 2

    Slice the eggplant lengthwise and scoop out the flesh with a spoon, leaving a shell about 1 cm thick. Chop the pulp and set aside.

  3. Step 3

    Place the eggplant halves on a baking sheet, drizzle with a little extra virgin olive oil and bake for 15 minutes.

  4. Step 4

    Sauté the onion and garlic in a pan with a dash of extra virgin olive oil.  Add the ground meat and cook until browned.

  5. Step 5

    Add the chopped eggplant pulp, grated tomato and crushed walnuts. Cook everything over low heat for 10 minutes. Drain any water periodically, if need be. Season with salt and pepper to taste.

  6. Step 6

    Remove the eggplant halves from the oven and stuff them with the mixture of meat, vegetables and nuts. Sprinkle the cheese on top for melting and bake for 15 minutes more.
