Thai Cashew Chicken

Ingredients

  • 500 g diced chicken breast
  • 30 ml Bores Classic olive oil
  • 1 small onion
  • 1 red bell pepper
  • 1 carrot
  • 2 cloves of garlic
  • 1 teaspoon grated fresh ginger
  • 2 tablespoons soy sauce
  • 1 teaspoon honey
  • 80 g roasted cashews
  • Fresh cilantro to garnish
  • Salt and pepper to taste

Step by step

  1. Step 1

    Heat the olive oil in a wok or a wide frying pan over medium-high heat. Add the seasoned chicken and cook for 5 to 6 minutes until golden brown. Remove and set aside.

  2. Step 2

    Add the onion and red pepper, sliced into strips, the julienned carrot, the chopped garlic and the ginger to the pan. Sauté everything for a few minutes until the vegetables are tender but still crunchy.

  3. Step 3

    Add the chicken back to the pan, then add the soy sauce and honey. Reduce the heat and mix well so that all the ingredients are coated in the sauce. Cook for a few minutes.

  4. Step 4

    Add the roasted cashews and cook for a couple more minutes so the flavors can blend together.

  5. Step 5

    Serve hot, topped with a sprig of cilantro. Accompany with jasmine rice or basmati.
