Crush the chickpeas with some olive oil, a little salt and some of the water used to cook the chickpeas. When you’ve got a smooth hummus, spread it on the tortillas. Chop up the walnuts and sprinkle on top of the hummus. Slice the tomatoes and place on top of the chopped walnuts. Spiralise the courgette and carrot and arrange on top of the sliced tomatoes. Finish off with the onion or soya bean sprouts and a few drops of olive oil. Roll up and you’re good to go!

- 200 g (7 oz) cooked chickpeas
- 50 ml (2 US fl oz) Borges olive oil
- Onion or soya bean sprouts
- A handful of walnuts
