Brown the onion in a pan with a splash of olive oil. Add the sliced bacon. Cook it briefly, then add the nuts and dried fruit. Add salt and pepper to taste.

- 1 onion
- 100 g bacon
- 100 g mixed dried fruit
- 60 g shelled pistachios
- 60 g shelled walnuts
- 60 g shelled almonds
- A splash of Borges olive oil Classic
- 1 boneless turkey breast
- 50 ml white wine
- Salt and pepper

Flatten the turkey breast (buy it butterflied so you won’t need to slice it) and top it with the mixture of nuts, dried fruit and bacon for the filling. Roll it up carefully and tie it with a thin string to keep it from unrolling.

Brown the turkey breast in a pan with a splash of very hot olive oil.

Set it in a baking pan, pour the white wine over it and bake it for 45-55 minutes at 180 ºC until completely cooked and golden brown.
