Vegan Bolognese


  • 500 g Borges penne
  • 80 g textured soy protein
  • 1 tablespoon paprika
  • 1 onion
  • 2 cloves of garlic
  • 1 carrot
  • 100 g chopped walnuts
  • 40 ml dry red wine
  • 1 tablespoon of oregano
  • Salt and pepper
  • 750 g crushed tomatoes
  • A splash of Borges extra virgin olive oil

Step by step

  1. Step 1

    Cook the penne according to the instructions. Meanwhile, soak the textured soy protein in water for about 15 minutes, together with the paprika. Strain and set aside. 

  2. Step 2

    In a deep pan, brown the chopped onion and garlic in the extra-virgin olive oil over medium heat. Add the chopped carrot. 

  3. Step 3

    Add the well-drained soy, the walnuts, the wine, the oregano, and the salt and pepper. Finally, add the tomato, cover and cook over medium-low heat for 20 minutes. 

  4. Step 4

    Add the pasta to the pan, stir and serve.
