Vegan carbonara
Ingredients
- * 200 g Borges spaghetti
- * 1 pinch of salt
- For the sauce:
- * 75 g tofu
- * ¼ onion
- * 50 g walnuts
- * 300 ml walnut drink Borges Natura
- * 1 dash of Borges extra-virgin olive oil
- * 1 pinch of salt
- * 1 pinch of nutmeg

Boil the spaghetti in a pan with water and a pinch of salt. While it’s cooking, make the carbonara sauce.
Warm a little olive oil in a frying pan and gently fry the finely chopped onion. Cut the tofu and walnuts into small pieces and add to the frying pan when the onion begins to turn golden brown. Stir all the ingredients for a couple of minutes.
Add the walnut drink and turn up the heat until the mixture boils. Add salt and nutmeg to taste and cook for 5 more minutes, stirring all the while. Either serve the sauce as is or give it a whiz in the blender if you prefer a smoother sauce.
