Creamy Vegan Pasta Primavera
- 360 g Borges spaghetti
- 2 ripe avocados
- 1 tablespoon fresh coriander
- 90 g walnuts
- Borges extra virgin olive oil
- 100 g cherry tomatoes
Step by step
In a blender, blend together the avocados, cilantro, walnuts and the extra virgin olive oil (add oil to taste until the sauce has the desired thickness).
Mix the spaghetti with the fresh cherry tomatoes, sliced in half. Add the sauce and stir well before serving.
