Whether you choose a large microwavable mould or a mug, make sure you grease it well with a little butter to stop the cake from sticking.
Beat all the ingredients together with a blender until you get a smooth mixture. Here are a couple of tips for getting nice and light sponge cakes: beat the egg whites to stiff peaks (purely optional, but you’ll notice the difference) and, above all, sieve the flour first.
Pour the mixture into the mould or mug and microwave on medium power for 12 to 15 minutes. The cooking time will vary from one kind of microwave to another, so keep an eye on it to make sure it isn’t undercooked or overcooked. You can check by opening the microwave and inserting a toothpick into the mixture. If it comes out mostly dry (albeit slightly moist), then it’s done; if it’s still generally moist, give it another minute and check again.
Finally, grab a handful of nuts and put them over. It will give a crunchy bite, as well as being the perfect decoration.
