  • 1 large zucchini
  • 1 potato
  • 2 cloves of garlic
  • 1 egg
  • A pinch of fresh parsley
  • 60 g flour
  • Salt and pepper
  • A splash of Borges extra virgin olive oil

Step by step

  1. Step 1

    Finely chop the zucchini and potato in the food processor along with the two cloves of garlic (alternatively, you can grate them by hand). 


  2. Step 2

    Beat the egg and add it to the vegetables. Add the parsley and flour and stir well until the mixture is uniform. 

  3. Step 3

    Form the mixture into round fritters, approximately one centimeter thick, and fry them in a frying pan with plenty of ORGANIC extra virgin olive oil or SUNFLOWER oil. 

  4. Step 4

    Set them to drain on a paper towel to remove the excess oil.
