During the holidays, food is abundant and every year it comes the same: the Christmas leftovers.
Wondering what to do with your leftover turkey or other festive dishes?
No problem: simply cut the leftover meat into small pieces and fry in a frying pan with a dash of extra-virgin olive oil. Stir in some flour. When it’s all well cooked, add a dash of milk or, if you prefer, a dash of walnut drink. Leave to cook for a while and then you’ll have the filling for your croquettes. Shape the mixture into croquettes, dip in some beaten egg and coat with flour. Don’t worry if you end up with lots and lots of croquettes: freeze any you don’t want right now and they’ll make plenty of perfect future dinners.
Not managed to eat all the nougat either? Well, use it to make some delicious ice cream. Opened too many tins of food? Well, get sautéing those clams with some chopped vegetables or make a white asparagus soup. Use any extra wafers as the perfect topping for ice cream, smoothies or yogurt with muesli. Breathing new life into your festive leftovers was never so easy!
