Tres tacos de pollo servidos en una bandeja de madera con lima y aceite de oliva

Ingredients

  • 2 chicken breasts
  • 1 lime
  • 1 medium onion
  • 1 medium carrot
  • 1 zucchini
  • 150 g mushrooms
  • 8 corn tortillas
  • A splash of Borges extra-virgin olive oil
  • Salt and pepper

Step by step

  1. Step 1

    Cut the chicken breasts into strips and marinate them in the lime juice for half an hour. Then, pan fry the chicken in a drizzle of extra virgin olive oil and set it aside.

  2. Step 2

    Sauté the onion in a pan with some extra-virgin olive oil until it begins to brown. Add the sliced carrot and cook everything for a few minutes. Then add the sliced zucchini and mushrooms, and cook them, stirring occasionally. Add salt and pepper to taste.

  3. Step 3

    When the veggies are cooked al dente, add the chicken for a minute so the flavors mesh.

  4. Step 4

    Heat the corn tortillas on a very hot skillet or a griddle for one minute. Now, assemble the tacos with the chicken and vegetables.
