Lentil Salad with Walnuts and Honey Mustard Dressing

A vegetarian dish, healthy and very easy to prepare!

Ingredients

  • 250 g cooked lentils
  • 100 g cherry tomatoes
  • 100 g cucumber, diced
  • 1 red bell pepper, diced
  • 1 red onion, minced
  • 30 g arugula
  • 50 g chopped walnuts
  • 80 g crumbled feta cheese

For the dressing

  • 15 ml Borges Extra Virgin Character oil
  • 10 ml apple cider vinegar or balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • Salt and pepper

Step by step

  1. Step 1

    Combine the cooked lentils, cherry tomatoes, cucumber, red pepper, red onion and arugula in a large bowl.

  2. Step 2

    In a small bowl, mix the olive oil, vinegar, Dijon mustard, honey, salt and pepper.

  3. Step 3

    Pour the dressing over the salad and toss gently to blend all the flavors. Add the walnuts and feta cheese.
