Fish & Chips
Ingredients
- 600 g white fish fillets (cod, hake, or pollock)
- 3 large potatoes
- 150 g flour
- 50 g cornstarch
- 1 teaspoon baking powder
- 200 ml ice water
- Salt to taste
- A large splash of Borges Classic oil
- Lemon wedges
Step by step

Step 1
Peel the potatoes and slice them into thick sticks. Rinse them under the faucet to remove any excess starch and dry them thoroughly with a clean dish cloth.

Heat the oil over medium heat in a deep frying pan, saucepan, or fryer. Fry the potatoes for 6-8 minutes without browning them. Remove and set aside.

Turn up the temperature of the oil to medium-high. Fry the potatoes again for another 3-4 minutes until they are golden brown and crispy. Drain them and add salt to taste.

Pat the fish fillets dry with paper towels and season them lightly with salt.

In a bowl, mix the flour with the cornstarch and the baking powder. Add the water gradually, stirring constantly, until the batter is thick but still liquid, with no lumps.

Coat the fish in the batter and fry it immediately in the hot oil, in batches, for 3-4 minutes per side or until the batter is golden brown and crispy.

Remove the fish, drain it on paper towels and serve it hot along with the fries and some lemon wedges.
