Carrot Tart

Ingredients
- 1 sheet of shortcrust or puff pastry
- 3 large carrots, thinly sliced
- 2 large eggs
- 150 ml half and half
- 60 g grated cheese (feta, goat cheese, or semi-aged cheese)
- 30 ml Borges extra virgin olive oil
- 80 g sliced green or black olives
- 1 teaspoon dried thyme or rosemary
- Salt and pepper to taste
- A handful of walnuts
Step by step

Step 1
Preheat the oven to 180 ºC. Lay the crust in a tart pan, prick the base with a fork and bake for 10 minutes.

Add some extra virgin olive oil to a pan and lightly sauté the carrots for about 5 minutes. Set aside.

Beat the eggs together with the half and half. Add the cheese, herbs, salt, and pepper.

Arrange the carrots decoratively in the pre-baked crust. Scatter the olives on top.

Pour in the egg mixture and spread it evenly. Add a drizzle of extra virgin olive oil.

Bake the tart for 25-30 minutes until set and golden brown. Top with the chopped walnuts.
