Spaghetti all’aglio e olio. While you’re boiling the spaghetti, fry some garlic in plenty of extra-virgin olive oil (throw in a hot chilli pepper for good measure, if you dare…). When they’re golden brown, remove and add the strained spaghetti. Serve with the fried garlic and grated Parmesan on top. Enjoy!
Pasta salad. If you boil some pasta while you’re getting ready to go to work in the morning and pop it in the fridge when you get there, at lunchtime all you’ll have to do is add some tomato, avocado, blue cheese, radishes, a handful of chopped nuts, a sprinkling of herbs and a drizzling of extra-virgin olive oil for a scrumptious pasta salad!

Start by mastering the classic version, made with basil, extra-virgin olive oil and pine nuts, before deconstructing it: try walnuts or pistachios instead of pine nuts, parsley instead of basil, a plant-based drink instead of extra-virgin olive oil… the delicious possibilities are endless!
