Spiced Biryani

Ingredients
- 500 g bone-in leg of lamb
- 400 g basmati rice
- 1 large onion
- 3 cloves of garlic
- 20 g fresh ginger
- 2 ripe tomatoes
- 1 teaspoon turmeric
- 1 teaspoon ground cumin
- 1 teaspoon garam masala
- 1 teaspoon ground cinnamon
- 4 cardamom pods
- Salt and pepper to taste
- 120 g full fat, sugar-free yogurt
- 35 ml Borges extra virgin olive oil
- 750 ml chicken broth or water
- 20 g fresh cilantro
- 20 g fresh mint
- 50 g roasted almonds or cashews (optional)
Step by step

Step 1
Rinse the basmati rice until the water runs clear and let it soak for 30 minutes.

Heat the extra virgin olive oil in a deep frying pan or pot and add the sliced onion. Cook over medium heat until the onion is golden brown and caramelized.

Add the chopped garlic, ginger, and chopped tomatoes and stir until the mixture forms a thick sauce. Add the spices: turmeric, cumin, garam masala, cinnamon, cardamom and pepper.

Mix well and add the lamb along with the yogurt. Cook over medium heat for a few minutes until the flavors are blended and the meat is browned.

Add the rice and the hot broth. Cover and cook over low heat for 15–20 minutes, until the rice has absorbed all the liquid and is fluffy.

Turn off the heat and let the pot sit for 5 minutes. Sprinkle with fresh cilantro and mint. For an extra touch, add roasted almonds or cashews.
