Ingredients

  • 4 ripe avocados
  • 1 litre vegetable stock
  • Borges extra-virgin olive oil
  • 1 lemon
  • Borges toasted almonds
  • Salt and pepper

Step by step

  1. Step 1

    Scoop out the flesh from the avocado and mash to a puree
  2. Step 2

    Warm up the vegetable stock and then take off the heat. Leave to cool before adding the lemon juice and avocado puree. Stir to make a smooth, creamy soup. Add salt and pepper to taste.

  3. Step 3

    Serve with toasted almond bits and a swirl of extra-virgin olive oil.
