Lemony Baked Cod

Ingredients
- 4 fillets desalted cod
- 3 tablespoons Borges Classic olive oil
- 1 lemon
- 2 cloves of garlic
- 1 teaspoon dried oregano
- 1 tablespoon chopped fresh parsley
- Salt and pepper to taste
Step by step

Step 1
Preheat the oven to 200 ºC. Place the cod fillets in a baking dish, lightly greased with olive oil.

In a bowl mix the oil, the lemon juice and zest, the chopped garlic, and the oregano.

Season the cod with salt and pepper and pour the mixture of lemon and oil over it, making sure the fish is well coated.

Bake for 12-15 minutes, depending on the thickness of the fillets, until softened.

Take the fish out of the oven and sprinkle the chopped parsley on top. Add a little extra squeeze of lemon for a touch of tang.
