Easy Quinoa Salad


  • 200 g quinoa
  • 1 large avocado
  • ½ Golden Delicious apple
  • 80 g gorgonzola-style blue cheese
  • 2 cans of tuna packed in water

For the Vinaigrette

  • 60 ml Borges extra virgin olive oil
  • 20 ml Borges balsamic vinegar (or balsamic cream)
  • 1 teaspoon Dijon mustard
  • A splash of orange juice
  • Salt and pepper
  • 80 g chopped walnuts

Step by step

  1. Step 1

    Cook the quinoa following the instructions on the package. Drain and set it in the fridge to cool. 

  2. Step 2

    Thinly slice the avocado and apple and add them to the quinoa. Add the crumbled blue cheese and the well-drained tuna. 

  3. Step 3

    For the vinaigrette, mix all the ingredients and pour them over the salad. Mix well and serve very cold.
