Vegan caesar salad


  • 1 head of French lettuce
  • 180 g cubed tofu
  • 100 g croutons
  • 100 g Borges green olives
  • Salt and pepper

For the Caesar dressing:

  • 1 soy yogurt
  • 1 tablespoon Borges extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 fresh chive leaf, chopped

Step by step

  1. Step 1

    In a bowl, mix the lettuce, tofu, croutons and sliced olives. Season with salt and pepper to taste. 

  2. Step 2

    For the dressing, combine all the ingredients in a bowl and mix with a fork until blended. 

  3. Step 3

    Pour the dressing over the salad.
