  • 1 zucchini
  • 1 large ripe tomato
  • 80 g Borges green olives
  • 1 medium onion
  • 100 g sweet corn
  • 8 radishes
  • A few basil leaves
  • Salt and pepper

For the vinaigrette

  • 50 ml Borges extra virgin olive oil
  • 15 ml vinegar
  • A pinch of oregano
  • A pinch of tarragon

Step by step

  1. Step 1

    Slice the zucchini into thin strips, like spaghetti, using a knife or a mandoline. Add the diced tomato, the olives (whole or sliced, as you prefer), the julienned onion, the corn and the sliced radishes. Add a few basil leaves. 

  2. Step 2

    To prepare the vinaigrette, mix the extra-virgin olive oil, the vinegar, the oregano and the tarragon. 

  3. Step 3

    Pour the vinaigrette over the salad, season with salt and pepper and stir well to bind the flavors together.
