Avocado, arugula and parmesan toast served in a white dish with olive oil


  • 1 ripe avocado
  • 1 medium tomato
  • A few leaves of arugula
  • A very thin slice of Parmesan cheese
  • A handful of crushed almonds
  • A dash of Borges extra virgin olive oil

Step by step

  1. Step 1

    In a bowl, mash the very ripe avocado with a fork. Add a dash of extra virgin olive oil and a pinch of salt.

  2. Step 2

    Place the avocado on a medium sized piece of whole wheat toast.

  3. Step 3

    Top with two slices of tomato, arugula, Parmesan and almonds, and finish with another drizzle of extra virgin olive oil on top.
