Heat a splash of extra-virgin olive oil in a saucepan and sauté the onion and garlic in it. When they begin to brown, add the green pepper. Cook for about 5 minutes.
Chicken and Rice Casserole
- 300 g rice
- 4 boneless chicken thighs, in pieces
- 1 medium onion
- 1 clove of garlic
- 1 green pepper
- Salt and pepper
- Borges extra virgin olive oil
- 1 liter of water or vegetable broth
Step by step
Add the chicken and continue cooking until golden brown. Then add the rice and cook it together with the rest of the ingredients for a few minutes. Add salt and pepper to taste.
Pour in the water or vegetable broth and cook over high heat for 4-5 minutes. Lower the heat and cook for about 15 more minutes over low heat.
Let it rest, covered, for another 5 minutes.
