Brown the salmon in a pan with a few drops of extra virgin olive oil. Take it out of the pan and set it aside.

Coconut curry salmon
Ingredients
- 4 salmon fillets
- ½ onion
- 2 cloves of garlic
- 1 tablespoon red curry paste
- 500 ml coconut milk
- 1 tablespoon lime juice
- A splash of Borges extra virgin olive oil
- Salt and pepper

Add a little more oil and brown the onion and the sliced garlic. Add the red curry paste and cook for 5-7 minutes.

Pour in the coconut milk and continue cooking for a few minutes until it thickens. Add the salmon and lime juice. Season with salt and pepper and cook everything together for a few more minutes.
