Easter focaccia

A special recipe for Easter day!

Ingredients

  • 7 g dry yeast
  • 10 g sugar
  • 300 ml warm water
  • 500 g bread flour
  • 10 g salt
  • 50 ml Borges extra virgin olive oil
  • 100 g Borges green pitted olives
  • Fresh herbs to taste: rosemary, thyme, or basil
  • Salt flakes for garnish

Step by step

  1. Step 1

    In a large bowl, mix the yeast with the sugar and a little warm water. Let it sit for 5-10 minutes until bubbles begin to form.

  2. Step 2

    Add the flour, the rest of the water, the salt, and the extra virgin olive oil (set some aside to brush over the top later). Knead for 8-10 minutes until the dough is smooth and stretchable. Cover with a damp cloth and let it rise for 1 hour in a warm place until it has doubled in size.

  3. Step 3

    On a baking sheet lined with parchment paper, turn out the dough and shape it into an oval to resemble an Easter egg. With lightly oiled hands, gently stretch the dough until it is the desired size.

  4. Step 4

    Add the olives, pressing the slices gently into the surface of the dough. Sprinkle with the fresh herbs and a little flaked salt.

  5. Step 5

    Cover with a cloth and let it rise again for 30 minutes.

  6. Step 6

    Preheat the oven to 200 °C. Brush the surface with extra virgin olive oil and bake for 25-30 minutes until the focaccia is golden brown. Serve lukewarm.
