Vegan baking is now all the rage! Delicious, healthy cakes without lots of saturated fats or packed with calories. There are thousands of great recipes, but this vegan chocolate birthday cake is hard to beat.

Ingredients

  • 300 g flour
  • 300 ml Borges Natura almond drink
  • 80 ml Borges extra-virgin olive oil
  • 80 g raw cane sugar
  • 50 g sugar-free cocoa powder
  • 50 g baking powder
  • A few drops of lemon juice
  • Cooking chocolate to spread on top
  • Some nuts

Step by step

  1. Step 1

    Preheat the oven to 180 ºC and grease a cake tin thoroughly with extra-virgin olive oil.

  2. Step 2

    Mix the raw cane sugar, cocoa powder, baking powder and sieved flour in a bowl. Add the almond drink and lemon juice and stir well to form a smooth paste. Add some chopped nuts. Pour the mixture into a cake tin and bake at 180 ºC for about 35–40 minutes.

     

  3. Step 3

    Take the cake out of the oven and spread the melted cooking chocolate on top (melt the chocolate with a little almond drink). Leave to cool at room temperature and top off with a handful of nuts.
