  • 300gr dry beans
  • 400gr cod
  • 2 eggs, boiled
  • Parsley
  • 4 tomatoes
  • 4 spring onions
  • Olives, black and green
  • 2dl Borges Extra Virgin Olive Oil
  • Salt
  • Borges Red Wine Vinegar

  1. Step 1

    Boil the beans in warm water. If they are good quality beans they don’t need to be soaked before cooking. Add some salt almost at the end of the boiling time. Once the beans are boiled, let them to cool down and set aside. Cut the cod into strips and either soak it in water or rinse it directly under cold running water. Using individual casserole dishes, place some beans, cod, tomato cut in quarters and chopped onion all arranged in layers. Season it with olive oil, vinegar and salt. Place half boiled egg on to and garnish with a handful of olives and chopped parsley.
