Focaccia with Olives, Walnuts, and Herbs

Ingredients
- 500 g flour
- 7 g dry yeast
- 10 g salt
- 350 ml warm water
- 60 ml Borges extra virgin olive oil
- 120 g chopped olives (green or black)
- 80 g walnuts
- 1 teaspoon fresh rosemary
- Flaked salt for topping
Step by step

Step 1
In a bowl, mix the flour, yeast, and salt. Add the warm water and olive oil and mix again; the dough will be wet and sticky.

Knead for a few minutes and then set the dough aside to rise, covered with a dry kitchen towel, for about an hour or until it has doubled in size.

Transfer the dough onto a well-oiled baking sheet and use your hands to stretch it out. Make dimples in the dough with your fingertips.

Top with the olives, coarsely chopped Pizarro walnuts, and rosemary. Press them lightly into the dough and then drizzle with a little olive oil.

Let the dough rest for another 20 minutes while you preheat the oven to 220 °C.

Bake the focaccia for 20-25 minutes until it is golden brown and crispy. Just after you take it out of the oven, sprinkle it with flaked salt and drizzle on a little extra virgin olive oil.
