Mediterranean salad healthy, fresh and vegan

Ingredients

  • 320 g mixed leaves
  • 2 ripe tomatoes
  • 1 medium onion
  • 60 g olives
  • 100 g vegan cheese in cubes

For the vinaigrette:

  • 3 tbsp Borges vinegar
  • 6 tbsp Borges extra-virgin olive oil
  • A pinch of oregano
  • Salt and pepper

Step by step

  1. Step 1

    Put the mixed leaves, tomatoes, onion, olives and cheese together in a large bowl. 

  2. Step 2

    To make the vinaigrette, mix all the ingredients to bind the flavours together and then drizzle over the salad.
