Prawn and Avocado Salad
Ingredients
- 150 g cooked prawns
- 1 very ripe avocado
- ½ green apple
- ½ ripe mango
- 6 radishes
- A few leaves of arugula
For the vinaigrette
- 80 ml extra virgin olive oil Borges
- 30 ml apple cider vinegar Borges
- 2 teaspoons Dijon mustard
- 1 tablespoon lime juice
- Salt and pepper to taste

Step 1
Cut the avocado and apple into strips, cube the mango, and slice the radishes. Place everything in a salad bowl.

Add the arugula and the shrimp.
