Arrange the pine nuts on a plate and toast them in the microwave on high power for 3 minutes. Wash the rice and put in a bowl one spoonful of olive oil, curry powder and salt. Add the drained rice to the bowl and cover with boiling water. Microwave on high power for 15 minutes. Leave to stand before serving. Scatter some pine nuts over the top.
