Ingredients

  • 4 pieces of salmon (fillets or steaks)
  • For the sauce:
  • 2 teaspoonfuls of wholegrain mustard
  • 200 ml (7 US fl oz) orange juice
  • 2 teaspoonfuls of thyme
  • 1 soupspoonful of honey
  • 1 teaspoonful of olive oil
  • Pepper
  • Salt

Step by step

  1. Step 1

Mix the orange juice, honey, mustard, thyme and olive oil together in a bowl with a spoon. Next, put the mixture into a saucepan over a high heat and when it starts to boil, turn down the heat and wait for the sauce to reduce by half. Set aside.

Brush the salmon with the olive oil, add some salt and pepper and put it into a hot frying pan with the skin face down and cook quickly on both sides. Serve with the warm sauce you made earlier.

  2. ‘- You can serve the salmon with baked potatoes, boiled rice or steamed vegetables to make a tasty, highly nutritious dish.
    – If you’re not a great fan of frying, you can microwave the salmon, either wrapped in baking paper (en papillote) or in a microwave-safe container.
