  • 8 sheets of rice paper
  • 100 g sliced smoked salmon
  • 1 cucumber
  • 1 tub of cream cheese
  • Fresh mint leaves
  • Fresh spinach leaves

    Wash, peel and cut the cucumber into thin sticks. Wash the fresh spinach leaves. Put by.

    Moisten the sheets of rice paper with warm water and then dry. Spread them out over a work surface. On top, put some fresh spinach leaves, one or two slices of smoked salmon, a few cucumber sticks, some spoonfuls of cream cheese and a couple of fresh mint leaves.

    First roll up the middle section to cover the filling and then fold in the sides and roll up completely.

    You could cut the rolls in two to reveal the filling or serve them whole. Soya sauce or tartar sauce (or both!) go well with these rolls.
