Spinach and Avocado Salad


  • 180 g baby spinach
  • 1 ripe avocado
  • 100 g feta cheese
  • ½ large green apple
  • 30 g walnuts
  • 30 g almonds
  • 30 g pine nuts
  • A pinch of cilantro

For the vinaigrette

  • 50 ml Borges Harmony extra virgin olive oil
  • 15 ml Borges apple cider vinegar
  • 1 tablespoon of lime juice
  • Salt and pepper

Step by step

  1. Step 1

    Place the spinach in a bowl with the diced avocado, the feta, and the sliced apple. 

  2. Step 2

    In a very hot pan with no oil, toast the walnuts and almonds (chopped into pieces) together with the pine nuts. Add the nuts to the salad along with a little cilantro. 

  3. Step 3

    To prepare the vinaigrette, mix the extra-virgin olive oil, apple cider vinegar, lime juice, salt and pepper 

  4. Step 4

    Pour the vinaigrette over the salad and toss well.
