Healhty and original vegan carbonara spaghetti

Ingredients

  • 200 g Borges spaghetti
  • 1 pinch of salt

For the sauce:

  • 75 g tofu
  • ¼ onion
  • 50 g walnuts
  • 300 ml walnut drink Borges Natura
  • 1 dash of Borges extra-virgin olive oil
  • 1 pinch of salt
  • 1 pinch of nutmeg

Step by step

  1. Step 1

    Boil the spaghetti in a pan with water and a pinch of salt. While it’s cooking, make the carbonara sauce.

  2. Step 2

    Warm a little olive oil in a frying pan and gently fry the finely chopped onion.

  3. Step 3

    Cut the tofu and walnuts into small pieces and add to the frying pan when the onion begins to turn golden brown. Stir all the ingredients for a couple of minutes.

  4. Step 4

    Add the walnut drink and turn up the heat until the mixture boils. Add salt and nutmeg to taste and cook for 5 more minutes, stirring all the while.

    Either serve the sauce as is or give it a whiz in the blender if you prefer a smoother sauce.
