Burritos de verduras servidos en una bandeja con aceite de oliva virgen extra de Borges

Ingredients

  • 2 corn tortillas
  • 1 onion
  • 100 g red pepper
  • 100 g green pepper
  • 1 clove of garlic
  • A pinch of chilli powder (depending on how hot you like them)
  • 2 tomatoes
  • 250 g corn
  • 2 tbsp Borges extra-virgin olive oil
  • 2 tsp green chilli sauce (optional)

Step by step

  1. Step 1

    Cut the onion into small cubes and add to a frying pan with the extra-virgin olive oil. Gently fry, and when it starts to turn golden brown, add the cubed peppers and corn.

  2. Step 2

    Once all the vegetables are golden brown, add the garlic, chilli and grated tomatoes. Add salt and pepper and cook for 10 minutes over a medium heat.

  3. Step 3

    Take off the heat and put by. Wipe the frying pan with kitchen paper so that you can begin to assemble the tortillas. Add a tortilla to the frying pan and leave to warm for a minute, before adding the filling and folding up the burrito tightly.

  4. Step 4

    Cook the burrito until both sides are nicely toasted. Top off with the green chilli sauce.
