Pasta with Artichokes and Spinach
Ingredients
- 400 g penne
- 300 g canned artichoke hearts
- 1 small onion
- 3 cloves of garlic
- 200 g fresh spinach
- A splash of Borges extra virgin olive oil
- Salt and pepper
- 1 teaspoon ground cloves
- 1 teaspoon fresh oregano
- 100 ml vegetable stock
- 100 g grated Parmesan
Step by step

Step 1
Cook the pasta following the manufacturer’s instructions.

Sauté the onion and garlic in a deep frying pan with a splash of extra virgin olive oil.

Add the quartered artichokes and cook for a few minutes until they are golden brown. Add the spinach and cook until wilted. Season with salt and pepper and then add the cloves and oregano.

Add the vegetable broth and cook everything for a few minutes.

Add the pasta to the pan and stir well to blend the flavors together. Add salt to taste if necessary and serve topped with Parmesan cheese.
