Lentil soup

Enjoy this lentil soup: it’s perfect for any dinner! A dish suitable for vegans and vegetarians.

Ingredients

  • 300 g lentils
  • 1 onion
  • 2 cloves of garlic
  • 2 carrots
  • 1 liter vegetable stock
  • 30 ml Borges red wine vinegar
  • 30 ml Borges extra virgin olive oil
  • Salt and pepper

Step by step

  1. Step 1

    Heat the extra virgin olive oil in a saucepan. Add the julienned onion, chopped garlic and thinly sliced carrots and sauté for 5 minutes.

  2. Step 2

    Add the lentils and stir for a few minutes to bind all the flavors together.

  3. Step 3

    Pour in the vegetable stock and bring to a boil.

  4. Step 4

    Reduce the heat and simmer for 40 to 60 minutes (depending on the variety of lentils you’re using), until the lentils soften.
