Salt Cod Salad with Vinaigrette

Ingredients
- 250 g rehydrated salt cod
- 1 crisp apple
- A handful of raisins
- 1 red onion
- A handful of sprouts or arugula
- 50 ml Borges extra virgin olive oil
- 15 ml Borges balsamic vinegar of Modena
- 1 teaspoon honey
- Salt and pepper to taste
- 60 g of sliced almonds or walnuts
Step by step

Step 1
Shred the cod and, if necessary, rinse it in water to soften it. Drain it well.

In a bowl, combine the diced apple, raisins, and thinly sliced onion. Add the sprouts and the cod.

Prepare the vinaigrette by mixing the extra virgin olive oil, balsamic vinegar of Modena, honey, salt and pepper. Beat until emulsified.

Pour the vinaigrette over the salad and mix gently. Sprinkle the sliced almonds or walnuts on top for more texture: this is optional, but it makes a big difference. Serve immediately.
