Caprese Pasta Salad
Ingredients
- 300 g Borges penne
- 200 g cherry tomatoes
- 150 g fresh mozzarella
- 50 g fresh basil
- 40 ml Borges extra virgin olive oil
- 2 tablespoons grated Parmesan cheese
- Salt and pepper to taste
For the dressing
- 50 ml Borges extra virgin olive oil
- 15 ml lemon juice
- 1 teaspoon Dijon mustard
- 1 tablespoon unsweetened yogurt
- 1 clove of garlic
- Salt and pepper to taste
Step by step

Step 1
Cook the pasta in plenty of salted water, according to the instructions on the package, until it is al dente. Drain and rinse under cold water to stop the cooking process.

Prepare the dressing by mixing the extra virgin olive oil, lemon juice, mustard, yogurt, and crushed garlic. Stir until it emulsifies and season with salt and pepper.

In a large bowl, mix the cooked pasta, halved cherry tomatoes, chopped mozzarella, and basil. Add the grated Parmesan.

Pour the dressing over the salad and gently toss to coat the ingredients.

Serve the salad at room temperature or slightly chilled, garnished with basil and a drizzle of extra virgin olive oil.
