Roasted Cauliflower with Za’atar

Ingredients
- 1 large head of cauliflower
- 3 tablespoons Borges Classic olive oil
- 2 teaspoons za’atar
- 1 teaspoon ground cumin
- Salt and pepper to taste
- 50 g unsweetened Greek yogurt
- 1 teaspoon lemon juice
- A handful of chopped pistachios (optional)
- A sprig of fresh parsley

Step 1
Preheat the oven to 220 ºC. Cut the cauliflower into florets and transfer them to a baking sheet.

Mix the olive oil with the za’atar, cumin, salt, and pepper. Pour the mixture over the cauliflower and toss so that all the pieces are fully coated.

Bake for 20-25 minutes, stirring halfway through, until the cauliflower has softened and the edges are golden brown.

Mix the yogurt with the lemon juice and spread it over the base of a plate.

Place the roasted cauliflower on top of the yogurt and garnish with the chopped pistachios (optional) and fresh parsley.
