Watermelon and Cucumber Salad

Ingredients
- 400 g watermelon
- 1 large cucumber
- 100 g feta
- A handful of fresh mint leaves
- 2 tablespoons Borges extra virgin olive oil
- 1 tablespoon Borges balsamic vinegar of Modena
- A handful of roasted almonds
- Salt and pepper to taste
Step by step

Step 1
Transfer the cubed watermelon and thinly sliced cucumber into a large salad bowl. Add the crumbled feta and mint leaves.

Prepare the dressing by mixing the extra virgin olive oil with the balsamic vinegar and a pinch of salt and pepper.

Pour the vinaigrette over the salad and mix gently so as not to crush the watermelon.

Add the chopped toasted almonds just before serving for a crunchy contrast.
