Today, we’re going to replace the usual formula of starter, main course and dessert with a selection of finger foods that will delight young and old alike. A fun and healthy way to break with the old routine. Ready?

King prawn and mango brochette

This quick and easy finger food has a delicious combination of flavours. All you’ll need are cooked king prawns and fresh mango, plus some wooden skewers to make the brochettes. Peel and devein the king prawns, then peel and cube the mango. Alternate the two ingredients on the skewer, leaving enough space at the ends to pick them up easily. Serve with a homemade mayonnaise or fresh vinaigrette. Don’t forget to give the vinaigrette a good shake: check out this tip.

Hake nuggets

An original take on the classic chicken nugget, but this time with a sea breeze (it’s also a cunning way of hiding fish so that kids won’t notice they’re eating it). First you’ll need fresh hake (steaks, slices or even leftover cooked hake: this is a perfect way to use up leftovers). If the fish is uncooked, cook it in plenty of salted water and a dash of extra-virgin olive oil (about 8 minutes for every 500 g). Once it’s ready, let it cool, remove any bones and flake it with your hands. Heat some extra-virgin olive oil in a frying pan and add 200 ml of evaporated milk. Stir and add the flaked hake. Add salt and pepper to taste, mix together well and leave to cool. Shape the mixture into balls, coat them in egg and breadcrumbs and fry in plenty of extra-virgin olive oil. Delicious!

Pitta bread mini-pizzas

We shrink this classic Italian dish and replace dough with pitta bread. Irresistible! Spread a thick layer of fried tomato puree on the bread, followed by a layer of grated mozzarella (or any other kind of cheese you have to hand), and finally the other ingredients: turkey, chicken, tinned tuna, olives, etc. As in the previous recipe (perfect for using up leftovers), these pizzas are great for using up whatever you’ve got in the fridge. Sprinkle some oregano on top and bake for a couple of minutes in the oven.
